The Good Table in Castlemaine, 20 minutes north-ish of Daylesford

Chargrilled octopus, crisp white wine and a salad still warm from the sun outside

A roll call of their local producers and suppliers

Rocket, tatsoi, spinach and herbs in the garden out front

Daylesford has Lake House. Trentham has du Fermier (booked out until the end of the year!). Kyneton has Annie Smithers Bistrot. Whichever way you look at it, if you drive about an hour outside of Melbourne you're pretty spoilt for choice.

And, if you are willing to drive about 20 minutes further north, you'll hit my personal pick: The Good Table in Castlemaine. It's modern, crisp, elegant and... confident. I had a chargrilled octopus with a green leaf salad picked seven minutes prior from the gardens sitting in the sun out the front of the restaurant, and a dry Lethbridge Pinot Gris from the region. And if I could, I would do it all over again. Heaven.
